This is the reason why it is advisable to add avocado in salads composed of fruits and vegetables which do not contain monounsaturated fatty acids. Thus, by adding avocado, we multiply by 4 the absorption rate of lycopene (antioxidant present in tomatoes) and by 2.6 that of beta-carotene (precursor of vitamin A, present in carrots and in vegetables leafy greens).
